the steep gradient separating Burgundy’s ‘mountain’ from the valley floor of the Saône, is not only the prerogative of the Côte de Beaune and its northerly neighbour, the Côte de Nuits. Tucked away at higher elevations are the Hautes Côtes, an extremely fragmented area where vines have been growing at altitudes of between 300 and 450 metres since time immemorial. 22 villages in the Côte d’Or department and 7 in Saône-et-Loire are entitled to use this appellation.
