the production area embraces four villages situated in the southern part of the Mâconnais. The vines grow over a series of natural amphitheatres facing east and south-east, forming sites where winds to the west are deflected by the rocky ridges of Solutré and Vergisson. Although the appellation area does not boast any first growths, it is home to fifty or so climate-specific sites which can be stated on the label provided the wine has an ABV of 12% instead of 11%. The limestone-marl soils reveal various stages of the Jurassic era (Bathonian, Bajocian, Oxfordian, Kimmeridgian), promoting a varied range of ‘terroirs’. The wines of this appellation

these white wines are well-balanced, rich, harmonious, lively and fleshy with powerful aromas and a long-lasting finish. Wines drawn from soils referred to as deep (clay marl) are powerful, fat and full. Those which come from stonier soils with only a thin layer of vegetation, are more mineral and delicate. Solutré wines are rich whilst those of Vergisson are more elegant though also lighter. With a greenish-yellow hue, they display aromas of dried fruit such as grilled almonds, hazelnut, floral notes including honeysuckle, hawthorn, lily, honey and linden, though also gun-flint, warm brioche, gingerbread and a taste reflecting its ‘terroir’. They pair with sweetbread, veal steak in a cream sauce, scallops and fish served with a sauce.
