Here the vineyard classification system really comes into its own. The core of the wine region is formed of seven climate-specific sites comprising the Grand Cru appellation (see specific heading) and forty or so climate-specific sites classed as Chablis Premiers Crus, labelled under 17 denominations: Les Beauregards, Beauroy, Berdiot, Chaume de Talvat, Côte de Jouan, Côte de Léchet, Côte de Vaubarousse, Fourchaume, Les Fourneaux, Monts de Milieu, Montée de Tonnerre, Montmains, Vaillons, Vau Ligneau, Vau de Vey, Vaucoupin, Vosgros. The rest of the appellation is entitled to use the basic AC Chablis appellation. The outlying area, with its Portlandian limestone soils, is home to the Petit Chablis appellation.

Chablis 1er Cru wines are more robust though also more delicate than basic Chablis. Their lifespan ranges from 5 to 10 years and many of them spend some time under oak. They are the perfect match for grilled crayfish, lobster, fish in a white sauce, snails, seafood, oysters, goats cheese and veal stew.
