the Côtes du Jura appellation area covers over 600 hectares divided between 12 villages, with a focal point around Lons-le-Saunier, Poligny and Salins-les-Bains. A full range of soil types is present. At the highest elevations, limestone is interspersed with organic sediment whilst lower down, marl covers stones and on the lowlands, the soil is almost entirely clay. Red varietals used are Pinot noir, Poulsard and Trousseau and white varietals, Chardonnay and Savagnin.

The wines of this appellation

red wines made from Trousseau are reasonably tannic. Conversely, Poulsard yields more supple wines with aromas of morello cherry, wild cherry and raspberry. They pair with mountain pork meats and small cuts of venison. The dry whites boast distinctive mocha, dried fruit and green apple aromas, often imparted by the casks they are stored in, previously used for ‘vin jaune’. The ‘vins jaunes’ themselves develop fragrances of unripe walnut, fir tree honey and bitter almond. The ‘vins de paille’ display scents of toast, acacia honey, almond, nutmeg and gingerbread.
