Soil types vary greatly, ranging from predominantly limestone with patches of marl in the north, to stonier soils with a touch of clay in the south.

The wines of this appellation

the wines are aromatic (blackberry, cherry, raspberry, blackcurrant, leading into liquorice and venison as they age) and mature rapidly. Wines from the south are supple, fruity and more delicate, whilst those from the north display a good tannic framework and fat. Such diversity is not only down to the varying soil make-up, but also the aspect of the vineyards and the climate. Try with poached eggs in a red wine sauce, beef bourguignon, mildly-flavoured cheeses…
