The Collio D.O.C. appellation covers the hilly northern strip of the province of Gorizia, in Friuli-Venezia Giulia, between the Isonzo river to the east and the Judrio stream to the west, along the border with Slovenia. The vineyards, planted exclusively on hillsides, extend over roughly 1500 hectares of specialized vine cultivation, at altitudes ranging from 60 to 270 metres, mostly on south-facing slopes. The soils are of flysch origin, an alternation of marl and sandstone dating back to the Eocene and Paleocene periods, well drained and allowing deep rooting. The climate benefits from the shelter of the Julian Prealps against cold northerly winds and from the proximity of the Adriatic Sea, some twenty kilometres away, which moderates temperature swings. The authorised grape varieties are mostly white: chardonnay, malvasia istriana, müller-thurgau, picolit, pinot bianco, pinot grigio, ribolla gialla, riesling, riesling italico, sauvignon, friulano and traminer aromatico, alongside red varieties such as cabernet franc, cabernet sauvignon, merlot and pinot nero.

Collio D.O.C. comprises nineteen wine types, thirteen white and six red, with production historically dominated by whites. The white wines show a straw to golden yellow colour, more or less intense and sometimes tinged with coppery hues, a delicate and mildly aromatic nose, and a dry, lively, fresh palate, occasionally lifted by a note of almond. Some are vinified with extended skin contact, giving a deeper golden colour, fuller body and greater ageing potential. The red wines, made from cabernet franc, cabernet sauvignon, merlot or pinot nero, display a bright ruby colour, sometimes tinged with garnet, a distinctive nose marked by a fine herbaceous note, and a dry, round, full-bodied palate. The most structured cuvées may be aged in wood and gain complexity over time. The whites pair readily with fish, seafood and white meats, while the reds suit red meats, game and matured cheeses.
