in the heart of the Chablis area, seven great growth climate-specific sites occupy a hillside overlooking the right bank of the Serein. These are Blanchot (12.2 ha), Bougros (14.35 ha), Les Clos (24.75 ha), Grenouilles (9.10 ha), Preuses (11.05 ha), Valmur (11.90 ha) and Vaudésir (14.45 ha). The climate-specific site of La Moutonne, belonging to the Long Depaquit estate, is not officially classed as such under the Chablis Grand Cru appellation but is nevertheless recognised by INAO. This particular hillside, with the characteristic calcareous marl of Chablis, provides remarkable drainage and aspect for Chardonnay (known locally as Beaunois), which explains the outstanding potential of the wines.

The wines of this appellation

Chablis Grand Cru exhibit a greenish-yellow hue and exude fragrances of honey, hazelnut and mineral notes. They are concentrated wines, often firm when young, which develop fat and mellowness over time. Good vintages will age for between 10 to 15 years, developing intense aromas of dried fruit, toast, gingerbread, slightly oxidised notes and occasionally gun flint. Serving them with oysters in a cream sauce, fish in a sauce, poultry, veal stew… enhances their flavour.
