Cariñena D.O. covers 16 municipalities in the province of Zaragoza, Aragón, in the middle Ebro valley. The vines are planted between 400 and 800 metres of altitude on varied soils: limestone outcrops, stony terraces with good drainage, reddish clays and brown alluvial soils. The climate is continental, with cold winters, hot dry summers and low rainfall; the cierzo, a cold, dry wind blowing from the north, keeps the vineyard healthy and limits humidity. Authorised red varieties include garnacha tinta, cariñena (mazuelo), juan ibáñez and vidadillo alongside tempranillo, syrah, cabernet sauvignon, merlot and monastrell, while authorised white varieties include garnacha blanca, cariñena blanca and macabeo, complemented by chardonnay, parellada, moscatel de alejandría, sauvignon blanc and verdejo.

Cariñena D.O. produces mainly red wines from garnacha tinta and tempranillo, often blended with cariñena (mazuelo), cabernet sauvignon, syrah, merlot or monastrell. These are deep-coloured wines with ample structure and firm tannins, showing aromas of black and ripe red fruit, with spice and garrigue notes emerging with age; they generally have good ageing potential. Rosés, made from the same red varieties, are fruity and lively. White wines, based on garnacha blanca, macabeo, cariñena blanca or chardonnay, offer freshness and floral aromas. The appellation also produces naturally sweet and fortified wines from moscatel de alejandría, as well as quality sparkling wines. The reds pair well with grilled meats, lamb and matured cheeses; the whites and rosés suit tapas, fish and grilled vegetables, while the moscatel wines go well with desserts or blue cheese.
