The Trento D.O.C. appellation covers 74 wine-growing municipalities in the province of Trento, spread across the Adige Valley, the Cembra Valley, the Vallagarina, the Sarca Valley, the Valsugana and the Giudicarie valleys, in the heart of Trentino, in the Italian Alps. The vineyards extend over roughly 800 hectares, mostly on hillside slopes, with plots reaching up to 800 metres above sea level. The soils are calcareous and dolomitic, offering good drainage and encouraging naturally high acidity in the grapes. The mountain climate is marked by a wide temperature swing between day and night, which contributes to the aromatic finesse of the wines. Four grape varieties are authorised: chardonnay, pinot blanc, pinot noir and meunier. Trento D.O.C. stands out for its exclusive focus: it is the only Italian appellation devoted entirely to sparkling wines made by the traditional method, in white and rosé, with no still wine produced under the designation.

Trento D.O.C. produces exclusively sparkling wines made by the traditional method, with a second fermentation in the bottle, in white and rosé styles. The wines rest for a minimum of 15 months on the lees, extended to 36 months for wines labelled Riserva, which gives them added complexity and ageing potential. Colour ranges from pale straw to golden depending on the length of ageing, with pink hues of varying intensity in the rosé wines. The nose is fruity and floral on release, gaining more evolved notes over time from lees ageing. On the palate, the balance between acidity and roundness is the hallmark of the appellation, underpinned by a natural freshness drawn from the calcareous soils and mountain climate. These wines suit an aperitif, fish-based starters, carpaccio and crudités, as well as risotto and pasta with light sauces; the fuller Riserva bottlings pair well with more structured dishes.
