Trentino D.O.C. covers 72 wine-growing communes in the province of Trento, spread across the Adige Valley, the Cembra Valley, the Vallagarina, the Sarca Valley, the Valsugana and the Giudicarie valleys. The vineyards extend over roughly 7,500 hectares, planted between 70 and 700 metres above sea level, across a mostly mountainous and hilly territory. The soils are largely calcareous, stony and well drained, with a more porphyritic component in the Cembra Valley and schist-mica matrices in the Valsugana. The climate is continental and mountain-influenced, with cold, snowy winters and warm summers, tempered in the southern part of the zone by the moderating effect of Lake Garda, which brings a milder, sub-Mediterranean character. A wide range of grape varieties is permitted: chardonnay, pinot bianco, sauvignon, müller-thurgau, nosiola, riesling and moscato giallo among the whites; cabernet franc, cabernet sauvignon, merlot, carmenère, marzemino, teroldego, lagrein and pinot nero among the reds.

Trentino D.O.C. produces white, red and rosé wines (also called kretzer), as well as a meditation wine, Vino Santo. The whites, made mainly from chardonnay and pinot bianco, show a straw-yellow colour, an intense nose and a dry, full-bodied, harmonious palate; they are drunk young and pair with vegetable soups and poached or steamed fish. The reds, a Bordeaux-style blend of cabernet franc, cabernet sauvignon, merlot and carmenère, show a ruby-red colour, an intense, fruity nose and a dry, full-bodied, harmonious, lightly tannic palate; they pair with baked or grilled fish as well as heartier dishes. The rosés, with their orange-red hue, are delicate and best enjoyed as an aperitif. Vino Santo, made from dried nosiola grapes, is a sweet, complex wine suited to ageing and to being savoured at the end of a meal.
