Ward

The Simonsberg-Stellenbosch ward covers the southern and southwestern slopes of the Simonsberg mountain, at the heart of the Stellenbosch wine district, within the Coastal Region of the Western Cape. It is one of eight wards within the district. Elevation varies widely, from around a hundred metres on the valley floor to over a thousand metres on the upper slopes, creating a broad range of microclimates. Soils are derived from decomposed granite, deep and reddish on the foothills, giving way to clay and sandy soils on the valley floor. The climate is Mediterranean, tempered by cooling breezes that moderate summer temperatures and help preserve acidity in the grapes. Red varieties dominate the vineyards by a wide margin, led by Cabernet Sauvignon, followed by Merlot, Syrah, Cabernet Franc and Pinotage. The ward is distinct from its neighbour Simonsberg-Paarl, which lies on the opposite side of the mountain, in another district.

The wines of this appellation

Simonsberg-Stellenbosch produces mainly red wines, often blended in the Bordeaux tradition around Cabernet Sauvignon, Merlot and Cabernet Franc, alongside characterful Syrah and Pinotage. The naturally low yields of the granitic soils give small, concentrated berries, the source of dense, structured wines with firm tannins and a velvety texture once the fruit is fully ripe. The colour is deep, garnet to purple. The nose combines black fruit such as blackcurrant, blackberry and plum, mineral notes reminiscent of graphite, and a touch of spice or tobacco from barrel ageing. These are wines built for cellaring, able to develop over several years and gain tertiary complexity such as leather, forest floor and sweet spice. They pair well with grilled or braised red meats, game, roast lamb and hard, matured cheeses.
