Ward

Darling is a wine district of the Western Cape within the Coastal Region, on South Africa's west coast, about 75 kilometres north of Cape Town. It was recognised as an independent district in 2003, having long formed part of the neighbouring Swartland district, and it includes the Groenekloof ward. The vineyards lie only a few kilometres from the Atlantic Ocean, a proximity that sets Darling apart from more inland districts of the Coastal Region such as Stellenbosch or Paarl. The soils, mainly derived from decomposed granite, are ancient and free-draining, which pushes the vines to root deep in search of moisture; pockets of Oakleaf soils, red clay and lime-rich soils are also found. The climate, cooled by the Atlantic, shows a marked swing between day and night temperatures. Grape varieties grown here include sauvignon blanc, the region's signature variety and often trained as bush vines, along with shiraz, cabernet sauvignon, pinotage, chenin blanc and cinsault.

The wines of this appellation

Darling is first and foremost white wine country, led by sauvignon blanc, often grown as bush vines. These wines show a pale colour and an expressive nose of citrus, green fig, fresh herbs and flint, lifted by a saline edge drawn from the nearby Atlantic. On the palate, freshness stands out, supported by the day-to-night temperature swing that preserves the grapes' acidity. These whites are best enjoyed young, within their first two to four years. Red wines, made mainly from shiraz, cabernet sauvignon and pinotage, show a deep colour, aromas of dark fruit, spice and liquorice, firm tannic structure and good depth; they can age for several years in the cellar. The whites pair well with seafood, grilled fish and fresh goat's cheese, while the reds suit grilled meats, feathered game and spiced dishes.
