initially subsumed into the Coteaux d’Aix en Provence AC area, the tiny region of Baux de Provence became an appellation in its own right in 1995. Its hot, dry climate, predominantly limestone soils and rugged terrain provide an ideal growing environment for the local grape varieties (Grenache, Syrah, Mourvedre, augmented with Counoise, Carignan and Cabernet-Sauvignon). Only red and rosé wines are made here.
