The protected geographical indication Var may be supplemented with the name Sainte Baume, one of four smaller geographic units recognised within IGP Var, alongside Argens, Coteaux du Verdon and Correns. It covers sixteen communes in the central part of the department, around Brignoles and Saint-Maximin-la-Sainte-Baume, at the foot of the limestone Sainte-Baume massif overlooking the vineyard. The soils there are calcareous, characteristic of the area west of the Toulon-Draguignan line. The climate is Mediterranean, with hot, dry summers, mild winters and strong sunshine, tempered by the mistral wind that keeps the vines free of excess humidity. The grape varieties combine traditional Provençal varieties — grenache, cinsault, carignan, syrah and mourvèdre for red and rosé wines, vermentino and ugni blanc for whites — with more recently planted varieties such as cabernet sauvignon, merlot, chardonnay and viognier.

The wines of this appellation

Sainte Baume produces still wines and quality sparkling wines in all three colours. The rosés are usually made by direct pressing: pale in colour, with a lively, fruity profile. The reds, mainly blended from grenache, syrah and cabernet sauvignon, show a ruby to garnet robe with violet tints, fleshy body and firm tannic structure. The whites, based on vermentino, ugni blanc, chardonnay and viognier, stand out for their pale yellow robe with green or gold tints, their finesse and freshness. The rosés pair with Provençal cuisine, grilled dishes and fish; the reds suit red meats and slow-cooked dishes; the whites go well with fish, shellfish and fresh goat's cheese.
