Salento I.G.T. covers the far south of Puglia, spanning the entire administrative territory of the provinces of Brindisi, Lecce and Taranto, the whole of the Salentine peninsula and the Ionian Arc, between the Adriatic and Ionian seas. Soils are varied: deep clay-loam in the west, sandier and thinner along the coastal strip, and clay-sandy-loam with good drainage around Brindisi. The Mediterranean climate brings mild winters, hot summers and rainfall concentrated in winter, with a stronger maritime influence on the peninsula itself. More than fifty grape varieties are authorised, mixing native and international varieties: negroamaro, primitivo, susumaniello, malvasia nera and aglianico for reds; verdeca, fiano, bombino bianco, greco and malvasia bianca for whites; alongside varieties such as chardonnay, sauvignon, cabernet sauvignon and merlot. This ampelographic breadth sets Salento I.G.T., a broad framework, apart from the more restrictive controlled-origin appellations attached to the same territory.

The wines of this appellation

Salento I.G.T. produces white, red and rosé wines, along with frizzante, passito and novello versions, the latter in both red and rosé. Whites are pale yellow, with delicate aromas and a fresh palate, ranging from dry to off-dry. Rosés, deeply rooted in Salentine tradition and often based on negroamaro, show a more or less intense pink colour, fruity aromas and a harmonious, fresh palate best enjoyed young. Reds range from young, fruity styles to more structured, intense expressions, with a ruby colour deepening toward garnet with age and cellar ageing. Whites and rosés pair naturally with seafood, antipasti and light Mediterranean dishes; reds suit grilled meats, sauced pasta dishes and aged cheeses, with the more structured versions capable of several years' cellaring.
