Rubicone I.G.T. spans the provinces of Forlì-Cesena, Ravenna and Rimini, together with several communes in the province of Bologna, on the Adriatic side of Emilia-Romagna, the historic heart of Romagna's wine country. Soils vary across the zone: deep clay that lends vigour and balance to the vines, fresher and more fertile mixed soils, and limestone outcrops that favour floral notes and aromatic freshness. North-facing slopes and higher elevations yield fresher, more fragrant wines. More than thirty grape varieties are authorised, a far wider range than the neighbouring Romagna DOC appellations: Sangiovese, Trebbiano and Chardonnay lead, alongside international varieties such as Cabernet Sauvignon, Merlot and Syrah, and native grapes like Fortana, Centesimino and Uva Longanesi. This freedom in grape choice and blending sets Rubicone apart from the region's stricter denominations.

Rubicone I.G.T. produces white, red and rosé wines, made in still, semi-sparkling (vivace), frizzante and spumante versions, as well as red novello and passito styles. The whites show a straw-yellow colour of medium to good intensity, with floral and fruity aromas that vary with grape and terroir. The reds, most often built around Sangiovese, display ripe fruit notes sometimes lifted by floral or spicy nuances, with a structure ranging from supple to fuller-bodied depending on the blend. The rosés range from pale to deeper hues, with floral and fruity character. Whites and rosés pair well with fish, fresh cheeses and everyday Emilian cooking. The reds suit meats and heartier regional dishes; novellos are best enjoyed young and festive, while passito wines are better suited to the end of the meal.
