Lambrusco Grasparossa di Castelvetro D.O.C. is produced in Emilia-Romagna, in the province of Modena. The production area covers the entire territory of thirteen communes — Castelfranco Emilia, Castelnuovo Rangone, Castelvetro di Modena, Fiorano Modenese, Formigine, Maranello, Marano sul Panaro, Prignano sul Secchia, Savignano sul Panaro, Spilamberto, Sassuolo, Vignola and San Cesario sul Panaro — plus part of the commune of Modena. Soils range from partially decarbonated plains to clay-limestone soils on the hills and lower mountain slopes, generally fertile despite a compact clay texture. The climate is continental. The main grape variety is lambrusco grasparossa, at a minimum of 85%, complemented by other lambrusco varieties (including viadanese, salamino, oliva, montericco, marani, maestri, di sorbara, foglia frastagliata) and/or malbo gentile, up to a maximum of 15%. The appellation is distinguished by its hillier setting compared with other Lambrusco zones in the province, such as Sorbara, which is grown on the plain.

The appellation produces red and rosé wines, made in sparkling (spumante) and semi-sparkling (frizzante) styles. Their color is ruby red with violet highlights. The nose is vinous and enveloping, marked by red fruit and violet notes with a spiced undertone. On the palate, they show moderate acidity, good freshness and savoriness, a medium to structured body and restrained alcohol, often finishing with a note of almond. These are wines meant to be enjoyed young, for their fruit and liveliness. They traditionally accompany cured meats and dishes of Emilian cuisine such as gnocco fritto, while their structure also allows pairings with sauced dishes like tagliatelle or lasagne with ragù, roasted red meats and semi-firm cheeses.
