the appellation is situated in the villages of Quincy and Brinay (the left bank of the Cher). Sauvignon is the only permitted varietal. The vines occupy a plateau which is home to three different soil types: sandy gravel, sand, and sandy loam with sand and gravel. Silica and poor soils promote the ripening process. The area enjoys a hot, dry microclimate.

the wines are delicate, fruity, light, fresh and dry. These are elegant, distinguished wines that are also firm and vigorous. They can be drunk young though will also keep. They display a pale golden hue with the occasional greenish tint. On the nose, fragrances of almond, grapefruit, verbena, mushroom, fennel and thyme are present, and they can occasionally exude slightly smoky notes. Try them with fish, shellfish, cooked cold pork meats, goats cheeses, oysters, frogs legs…
