only plots set in the village of Saint-Nicolas de Bourgueil (Touraine) can apply for this appellation (slightly over 1,000 hectares). The vines grow mainly on gravel terraces where the soils are clayey gravel, though, like in Bourgueil, there are occurrences of sloping vineyards on calcareous clay. The red varietals Cabernet Franc and Cabernet Franc coax the best out of these soils.

usually lighter than Bourgueil, they are supple, soft, well-balanced, mellow and approachable wines. Even when they evolve quickly, they should not be drunk too soon. The dividing line between wines grown on ‘tuffeau’ and on gravel is becoming increasingly sharper. ‘Tuffeau’ imparts greater body and structure, yielding wines with a crimson hue and fragrances of red fruits like raspberry, blackberry, red currant, violet, liquorice and spices. Conversely, gravel produces lighter wines that can be drunk chilled. Pair them with white meats (pork fillet, veal cutlet), cooked cold pork meats or cheeses.
