The Comté Tolosan IGP spans twelve départements across the greater South-West, between the Atlantic Ocean, the Pyrenees and the first foothills of the Massif Central. Its production area, particularly extensive, brings together a wide range of terroirs. The vines grow on tertiary sedimentary soils typical of the Aquitaine basin, as well as on ancient alluvial deposits from quaternary terraces. The climate is temperate oceanic in the west, with mild winters and cool summers, turning more Mediterranean toward the east, with hotter, drier summers. This broad geography comes with an unusually wide range of permitted grape varieties, combining Southwestern specialities such as négrette, tannat and fer servadou with more widely grown varieties such as cabernet sauvignon, merlot, chardonnay and sauvignon. This diversity of soils, climates and grape varieties sets Comté Tolosan apart from neighbouring appellations, which cover smaller areas and rely on a narrower range of varieties.

Comté Tolosan produces red, rosé and white still wines, as well as sparkling rosés and whites and whites made from overripe grapes. The reds are light, round and easy-drinking, with aromas of red and black fruit; they are best enjoyed young, alongside charcuterie, grilled meats and Southwestern stews. The rosés are fresh and delightfully easy to drink, with fruity and sometimes spicy notes, pairing well with salads, grilled fish and summer dishes. Dry whites stand out for their pronounced aromatics, built around floral and fruity notes, suited to fish, shellfish or goat's cheese. The sweet whites, with exotic fruit aromas, go well with foie gras, fruit-based desserts or blue cheese. The sparkling wines, fine and delicate, with lively freshness, are well suited to an aperitif or festive occasions.
