Ward
Elim is a ward within the Cape Agulhas district, part of the Cape South Coast region in South Africa, close to Cape Agulhas, the southernmost point of the African continent. The vineyards lie on the Agulhas Plain, between 40 and 200 metres above sea level, roughly fifteen kilometres from the coast. The climate is one of the most maritime in the country: south-easterly and south-westerly winds blow almost continuously, cooling the vines and slowing ripening, while humidity remains high. The soils combine ferricrete (a local iron-rich crust), quartzite, weathered Bokkeveld shale and iron-rich clay. The first commercial vines were planted here in 1996, making Elim one of South Africa's youngest wine areas. Sauvignon Blanc dominates production, alongside Semillon, Shiraz and smaller plantings of Pinot Noir, Chardonnay, Cabernet Sauvignon and Merlot. This constant exposure to sea winds sets Elim apart from other parts of the Cape Agulhas district.

Sauvignon Blanc is Elim's flagship variety, producing dry, vibrant white wines with a saline, flinty minerality and notes of citrus, passion fruit and gunflint. Semillon and Chardonnay round out the white wine range, often with a fuller texture. Red wines, made from Shiraz, Cabernet Sauvignon, Merlot and smaller plantings of Pinot Noir, draw freshness, silky tannins and dark fruit, pepper and spice aromas from the cool climate. The freshness brought by the sea winds gives these wines good natural acidity, promising several years of ageing potential for the best cuvees. The whites pair well with seafood, oysters, grilled fish and fresh goat cheese. The reds suit grilled meats, feathered game and spice-driven dishes.
