The Amarone della Valpolicella appellation covers part of the territory of 19 communes in the province of Verona, in the Veneto region, between the foothills of the Alps and Lake Garda. The vineyards lie on soils of calcareous-dolomitic and basaltic origin, together with morainic and fluvial deposits of volcanic origin. The climate is temperate and moderately rainy, softened by the proximity of Lake Garda and sheltered by the surrounding mountains, with conditions approaching a Mediterranean character on the lower hills. The main grape varieties are Corvina Veronese, which Corvinone may partly replace, and Rondinella, complemented by a limited proportion of other local red varieties. What sets Amarone apart from other wines produced in the same area, such as Valpolicella or Recioto della Valpolicella, is its winemaking method: the harvested grapes are dried for several months before pressing, a process known as appassimento.

The wines of this appellation

Amarone della Valpolicella is a dry red wine made from grapes dried for several months before vinification, which gives it a naturally high alcohol level. Its colour is deep red, tending toward garnet with age. The nose is pronounced and distinctive, while the palate is full, velvety and warm, supported by a dense tannic structure inherited from this method of production. This concentration gives the wine good ageing potential; a Riserva version, aged for longer, is also produced for wines intended for extended cellaring. At the table, Amarone pairs with braised meats, roasts and both feathered and furred game such as pheasant, duck, wild boar or venison. It also matches well with aged hard cheeses such as Parmigiano Reggiano, Pecorino or Monte Veronese, whose rich, salty flavours stand up to the wine's power.
