Vino de la Tierra
Sierra Norte de Sevilla is a protected geographical indication in the north of the province of Seville, Andalusia, within the Sierra Morena range. It covers the municipalities of Cazalla de la Sierra, Constantina, Guadalcanal and Alanís, one of the three historic wine-producing districts of the province, alongside Bajo Guadalquivir and Aljarafe. Vineyards are planted at a minimum altitude of 450 metres, on poor, stony soils that are often slate-based. Annual rainfall ranges between 600 and 1000 mm, with no rain in August or September, which limits the development of rot. In summer, the difference between daytime and nighttime temperatures reaches around 18 degrees, favouring polyphenol formation and balanced grape ripening. Authorised varieties are, for white wines, chardonnay, colombard, sauvignon blanc, moscatel de Alejandría, palomino, pedro ximénez and viognier, and for red wines tempranillo, garnacha tinta, cabernet sauvignon, cabernet franc, merlot, pinot noir, petit verdot, syrah and tintilla de rota.

Wines from Sierra Norte de Sevilla are produced in white, rosé and red styles. Whites show a straw-yellow colour, fruity notes and a soft, velvety texture on the palate. Rosés range from pale pink to strawberry pink, with medium intensity, a fine texture and a fruity character. Reds display a bright cherry-red colour; they are aromatic wines with good body. Made from international varieties (chardonnay, sauvignon blanc, cabernet sauvignon, merlot, syrah, pinot noir) alongside traditional Spanish varieties such as tempranillo, garnacha, palomino, pedro ximénez and tintilla de rota, these wines combine freshness and structure, reflecting the mountain terroir of the Sierra Morena. Whites and rosés are best enjoyed young, as an aperitif or with fish and seafood. The fuller-bodied reds pair well with grilled meats, game or the mature cheeses typical of the region.
