The Soave D.O.C. appellation covers thirteen municipalities in the province of Verona, in the Veneto region, on the hills lying east of the city. The historic heart of the zone, between the municipalities of Soave and Monteforte d'Alpone, is entitled to the Classico designation. The soils are of volcanic origin, formed of basaltic tuff enriched with significant limestone outcrops, which lend the wines minerality and salinity. The vineyards are planted between 35 and 380 metres above sea level, under a climate where annual rainfall, ranging from 700 to 1000 mm, is concentrated in spring and autumn. The garganega grape, which has found an ideal terroir here, makes up at least 70% of the blend; it is completed by trebbiano di Soave and chardonnay, up to a combined 30%, with up to 5% of other white varieties authorised in the province of Verona.

The wines of this appellation

Soave D.O.C. is primarily a still white wine, with a straw-yellow colour and greenish highlights. The nose is fine and delicate, showing floral and fruity notes: elderflower, hawthorn, apple, pear and white peach, with a hint of citrus. On the palate it is dry, medium-bodied and well balanced, carried by lively freshness and a characteristic salinity inherited from the volcanic soils; the finish often closes on a light bitter-almond note, a signature of the garganega grape. These are easy-drinking wines, best enjoyed in their youth, when freshness and fruit expression are at their peak. The appellation also produces a Soave Spumante, with a fine, persistent mousse, in extra brut, brut, extra dry or dry styles, with an equally intense and delicate nose. At the table, Soave pairs well with vegetable soups and minestrone, poached or steamed fish, and fresh cheeses; it also makes a pleasant aperitif.
