Soave Classico is produced in the province of Verona, in the Veneto region, on the hillsides of the municipalities of Soave and Monteforte d'Alpone, which delimit the historic zone of the appellation, first recognised in 1931 and later incorporated into the Soave D.O.C. in 1968. This entirely hilly classic zone covers around 1,700 hectares of vineyard, divided into small parcels. The soils combine basaltic volcanic deposits, darker and more pronounced on east-facing slopes, with limestone formations of marine origin. Garganega is the dominant grape variety, accounting for 70 to 100 percent of plantings, complemented by Trebbiano di Soave and/or Chardonnay, which may make up to 30 percent of the blend. This volcanic origin, together with the restriction to the hillsides of Soave and Monteforte d'Alpone alone, sets Soave Classico apart from the wider Soave D.O.C., produced across thirteen municipalities with more varied soils, including plain areas.

Soave Classico produces exclusively still, dry white wines. Their colour is pale straw yellow with greenish highlights. The nose is delicate and fine, recalling white flowers, peach, green apple and citrus, lifted by a light mineral note and a touch of fresh almond typical of the Garganega grape. On the palate the wines are dry, lively, with taut acidity and moderate body, closing on a slightly bitter almond note that is characteristic of the style. Most are enjoyed young, for their freshness, though the most carefully made examples can age gracefully over several years, gaining further complexity. They pair well with risotto, fresh pasta, boiled white meats served with sauce, and shellfish.
