The Cadillac Côtes de Bordeaux designation covers 39 communes on the right bank of the Garonne, forming a narrow strip of vineyards roughly 60 kilometres long and 5 kilometres wide, spreading on either side of the town of Cadillac. The vineyard sits on a limestone cliff that follows the river's meanders, with soils dominated by clay and limestone. The oceanic climate, tempered by the proximity of the Garonne, protects the vines from spring frosts. Four principal red grape varieties are authorised: merlot, cabernet sauvignon, cabernet franc and malbec (locally called cot), complemented by carmenère and petit verdot as accessory varieties. Unlike some other Côtes de Bordeaux designations that also produce white wines, Cadillac Côtes de Bordeaux is reserved exclusively for red wines.

Cadillac Côtes de Bordeaux produces exclusively red wines with a deep, almost black colour. Built mainly around merlot blended with cabernet sauvignon, cabernet franc and malbec, they show notable aromatic finesse and a round, structured palate. They can be enjoyed young, on the fruit, but reward cellaring: between 4 and 10 years, or longer, their structure softens, they round out, and their bouquet gains in complexity and intensity. These wines pair well with grilled meats and red meats when young, and with meat in sauce, game and matured cheeses once they have aged in the cellar.
